  • Selenium plays an important role in protecting the health of body.It can slow the aging process, enhance immunity, and prevent cancer and so on.We obtain selenium mainly from food.In this paper, the commonly used technologies for the determination of selenium in food were reviewed briefly.It mainly contained about optical analysis methods, electrochemical analysis methods, chromatographic analysis methods, combination technique, and other methods.Meanwhile, combination technique used in selenium speciation analysis was also reviewed, which was wished for providing reference for the study on determination of trace selenium in food.
