Abstract
Nano-silver has been widely used as antimicrobial agent for various products due to its broad-spectrum antibacterial activity,potent bactericidal property,simple preparation,and no resistance developed. Therefore,the antibacterial activity,antibacterial mechanism,and the application of nano-silver in food storage and preservation period has been review. It is expected to provide a reference for the further development and utilization of nano-silver in food storage and preservation.
