Research Progress of THz Spectroscopy in Field of Food Additivity Safety

THz spectroscopy is a new type of non-destructive detection technology,several kinds of food additives have their characteristic absorption peaks in THz frequency range,therefore,the study of terahertz spectrum of food additives and illegal additives is conducive to a more comprehensive understanding of the constituent elements and related properties of food additives and illegal additives. The research method of terahertz spectroscopy technology,and the analysis of terahertz spectroscopy technology in the field of food additivity safety from identification,quantitative analysis and theoretical calculation methods on the basis of a large number of previous research results are introduced systematically in this paper. The existing problems are discussed,which would provide certain value of guidance for future research.
