Application Prospects and Research Hotspots of Edible Fungi Proteins

  • Edible fungi contains a rich variety of protein resources,and their research and application are becoming more mature. This article provides an overview of the species and characteristics of edible fungi proteins,and systematically summarizes the application in the fields of food,medicine,agriculture,chemistry industry,biotechnology,textile and biological sensors. At the same time,the research hotspots of edible fungi protein including processing adaptability,structure-activity relationship and large-scale production are discussed. The development trend is prospected to provide guidance for utilization and industrial upgrading of edible fungi protein resources.
