Abstract
The proteome of Leuconostoc mesenteroides BD3749,a strain with large amount of exopolysaccharides( EPS),was analyzed with 2-D gel electrophoresis.The results showed that during the process of EPS production,131 proteins were obviously changed by 2 folds,among which 25 proteins were dramatically changed by 10 folds.MASS analysis of the differential protein dots showed that glycosyltransferases of GH70 family,as well as chaperones were up- regulated in the process of EPS production.These results indicated that EPS synthesis was a complicated process which involved the regulation of many genes.
