Selenium speciation in fruits and vegetables

  • Selenium is one of the 14 essential trace elements.It can cause a variety of diseases in human body that lack or overdose supplement of selenium. Most of Chinese residents lack selenium. It increases added value and economic benefits by enriching selenium in fruits and vegetables by using different methods,which also makes it possible to supply appropriate amount of selenium in human daily diet. Therefore,selenium- enriched fruits and vegetables is a research that beneficial and great significance to human health.This review gives a brief overview of the current situation of selenium enriched fruits and vegetables in resent ten years. The methods of selenium enrichment and detection are summarized simultaneously.
