Correlation analysis of arabinoxylan oxidative cross- linking and barley malt filtration performance

Abstract
In this study, peroxidase ( POD) activity, bound ferulic acid and polyarabinoxylan ( PAX) contents, and filterability of 18 barley malts were analysed. And the correlations between them were studied by pearson correlation analysis.The results showed that there were significantly negative correlation between the filtration rate and the POD activities, wort viscosity, bound ferulic acid and PAX content in wort, the correlation coefficient were0.632 ( p < 0.01) , 0.521 ( p < 0.05) , 0.555 ( p < 0.05) and 0.664 ( p < 0.01) respectively. While as there were positive correlation between the content of PAX and the content of bound ferulic acid, wort viscosity, the correlation coefficient were 0.590 ( p < 0.05) and 0.595 ( p < 0.01) respectively.The result showed that the oxidative cross- linking of AX through ferulic acid polymerization could be associated with barley malt filtration performance.Further more, it was likely to result in poor malt filtration.This study provided a new theory for improving the filterability of barley malt.
