Screening, identification and growth characteristics of high acid-producing lactic acid bacteria

  • In order to obtain high-quality lactic acid bacteria for industrial production, three high acid-producing strains were screened from 8 conserved lactic acid bacteria stains.The high acid-producing strains were identified and their growth characteristics were studied. The results indicated that two stains of the three identified strains ( ST1 and ST3) were Lactobacillus paracasei. Another strain ( ST6) was Lactobacillus hamnosus. The optimum growing temperature was 31~37℃ for ST1 and ST3 and 37~43℃ for ST6.The optimum initial pH value was 5 to 7 for ST1 and 6 to 7 for ST3 and ST6.The growth of the three high-quality lactic acid bacteria would be inhabited by high salt concentration ( > 14% ) .
