Abstract
The antioxidant activities in vitro of marine collagen oligopeptides (MCOP) were evaluated from four respects by determination of the total antioxidant capacity and the scavenging activities against hydroxyl radical and superoxide radical as well as the reducing power. Then, MCOP was separated and purified by reversed phase high performance liquid chromatography (RP-HPLC) and the total antioxidant capacity of 11 fractions collected was assayed. Results indicated that MCOP exhibited total antioxidant capacity, scavenging activities against hydroxyl radical and superoxide radical and reducing power. After separation and purification by RP-HPLC, 5 fractions showed much higher total antioxidant capacity than MCOP, and played an important role in the total antioxidant activity of MCOP.Additionally, hydrophobic peptides in the MCOP presented higher activities than the hydrophilic ones.
