Abstract
The antioxidative activities of ethanolic extracts from persimmon leaves (EEPL) were evaluated in lard by Na\-2S\-2O\-3 I\-2 titration method.EPPL was effective in retarding lard deterioration, with activity increasing with concentration in the range 200 5000ppm at a concentration of 600ppm, EEPL showed a little higher antioxidative activity than 100ppm hesperidin and 100ppm tea polyphenol.The citric acid demonstrated better synergistic effect for EEPL than L ascorbyl stearate.
