淀粉多层级结构的分离、表征及应用研究进展

Recent Advances in the Separation, Characterization, and Application of Starch Hierarchy

  • 摘要: 淀粉是人类饮食的主要组成部分,具有淀粉颗粒、淀粉外壳、淀粉小体、直链淀粉和支链淀粉等丰富的多层级结构,可作为食品加工中多种理想的原料,因此涉及到各个层级结构的分离,而为了能够在合适范围内应用,还需要通过不同表征方法对多层级结构的结构特性进行准确表征。因此,本文对淀粉各层级结构的分离方法和结构表征进行了分析,并介绍了淀粉多层级结构不同的应用范围,以期为淀粉资源的开发和利用提供一定参考。

     

    Abstract: Starch is a major component of the human diet and has several hierarchies including granule, shell, blocklet, amylose and amylopectin, which can be used as the raw materials in food processing. In order to be applied in a suitable range, this involves the selection of separation methods and the accurate characterization of the structural properties of each starch hierarchy. Therefore, this paper analyzes the separation and characterization methods for each starch hierarchy, introduces their different applications, and thus provides some references for the development and utilization of starch resources.
