芜菁山楂复合饮料配方优化及其对运动耐力的影响

Optimization of Formula of Brassica rapa L. and Hawthorn Compound Beverage and Its Effect on Exercise Endurance

  • 摘要: 以芜菁和山楂为原料,制备芜菁山楂复合饮料,并考察其对小鼠的运动耐力影响。基于单因素实验结果,采用响应面分析确定芜菁山楂复合饮料的最佳配方后,分别对低、中、高剂量组动物按照0.1、0.2和0.3 mL/10 g鼠重剂量灌胃,探讨复合饮料对小鼠运动耐力的影响。结果显示,该复合饮料的最佳配方为山楂浸提液与芜菁多糖溶液的体积比3:1,赤藓糖醇用量3.4%,柠檬酸用量0.23%,复合稳定剂(m羧甲基纤维素钠:m黄原胶:m海藻酸钠=2:1:1)用量0.06%,所得饮料色泽均一,酸甜适中,具有芜菁与山楂的混合风味,静置后无明显沉淀,感官得分为(88.9±0.4)分。与空白对照组相比,所有饮料灌胃组均可显著延长小鼠的运动时间(P<0.05,P<0.01),减少运动时体内的乳酸累积和蛋白质或氨基酸分解(P<0.05,P<0.01),并可提高超氧化物歧化酶(Superoxide dismutase,SOD)和谷胱甘肽过氧化物酶(Glutathione peroxidase,GSH-Px)(P<0.05,P<0.01)的活性,因此有助于提高机体的运动耐力。

     

    Abstract: The Brassica rapa L. and hawthorn were acted as raw materials to develop the compound beverage of Brassica rapa L. and hawthorn. Subsequently, its effect on exercise endurance of animal was researched. Basing on the result of single factor test, the optimum formula of compound beverage was designed by response surface test. Meanwhile its effect on exercise endurance in Vivo was explored by animal test after for low, medium and high dosage groups were given at 0.1, 0.2 and 0.3 mL/10 g·BW intragastric administration, respectively. The optimal formula of the compound beverage were as follows: Volume proportion of hawthorn juice and polysaccharides solution of Brassica rapa L. was 3:1, dosage of erythritol was 3.4%, dosage of citric acid was 0.23%, dosage of compound stabilizer (sodium carboxymethyl cellulose:xanthan gum:sodium alginate = 2:1:1, mass ratio) was 0.06%. The ultimate beverage presented uniform color, moderate sweet and sour, mixture flavor of Brassica rapa L. and hawthorn, not observed obvious precipitate, the sensory score of beverage was 88.9±0.4. Compared with the results of blank control group, the compound beverage at different dosage could prolonged the exercise time of mice (P<0.05, P<0.01), decreased the LA accumulation and decomposition of protein or amino acid (P<0.05, P<0.01), and enhanced activity of SOD and GSH-Px (P<0.05, P<0.01). Therefore, it could contribute to improve exercise endurance of body.
