基于氨基酸含量的市售15个产区黑木耳的综合评价

Comprehensive Assessment of Auricularia auricular-judae for Sale from 15 Producing Areas Based on Amino Acid Contents

  • 摘要: 为了研究不同产区黑木耳基于氨基酸含量的品质差异,本研究以市售15个产区的黑木耳为研究对象,以黑木耳中所含的17种氨基酸含量作为评价指标,进行主成分分析和聚类分析。结果表明:从17个评价指标中提取出了4个主成分,累计方差贡献率达到89.674%,可较好地反映出市售15个产区黑木耳的综合信息,分析得出Phe、Arg、Pro、Met和Ser含量可以作为市售15个产区黑木耳的综合评价指标。隶属函数法评价出市售15个产区黑木耳基于氨基酸含量的品质优劣顺序为:黑龙江>辽宁>西藏>内蒙古>陕西>江西>浙江>河北>吉林>新疆>贵州>云南>湖北>甘肃>四川。聚类分析将市售15个产区黑木耳划分为三大类。第I类包括黑龙江、辽宁和西藏3个产区,其综合评分较高;第II类包括,内蒙古、陕西、江西、浙江、河北、吉林、新疆、贵州、云南、湖北和甘肃11个产区,其综合评分居中;第Ⅲ类包括四川1个产区,其综合评分较低。

     

    Abstract: To investigate the quality difference of Auricularia auricular-judaefrom different producing areas, Auricularia auricular-judaefor sale from 15 producing areas were used to tested materials in this study, 17 amino acid contents in Auricularia auricular-judae were used to assessing index, which were analyzed by principal component analysis and clustering analysis. Results showed that 4 principal components were extracted from 17 assessing index, their accumulative variance comtribution rate reached 89.674%, and could reflect preferably comprehensive information of Auricularia auricular-judae from 15 producing areas. Phe, Arg, Pro, Met and Ser contents could be comprehensive assessing index of Auricularia auricular-judaefor sale from 15 producing areas. The order of Auricularia auricular-judaequality from good to bad based on amino acid content of Auricularia auricular-judae for sale from 15 producing areas by subordinate fuction method was Heilongjiang>Liaoning>Xizang>Neimenggu>Shanxi>Jiangxi>Zhejiang>Hebei>Jilin>Xinjiang>Guizhou>Yunnan>Hubei>Gansu>Sichuan. Auricularia auricular-judaefor sale from 15 producing areas were divided into three classes by clustering analysis. Class I with higher comprehensive scores included 3 producing areas of Heilongjiang, Liaoning and Xizang. Class II with medium comprehensive scores included 11 producing areas of Neimenggu, Shanxi, Jiangxi, Zhejiang, Hebei, Jilin, Xinjiang, Guizhou, Yunnan, Hubei and Gansu, Class III with lower comprehensive scores included 1 producing area of Sichuan.
