短梗五加多酚运动饮料制备及缓解疲劳作用

Preparation of Polyphenols of Acanthopanax sessiliflorus Sports Beverage and Its Fatigue Relieving Effect

  • 摘要: 以短梗五加果多酚为原料,研制短梗五加多酚运动饮料,观察其缓解机体疲劳效果。在单因素实验的基础上,利用响应面试验,确定运动饮料组分的最佳配比后,考察不同组别小鼠的力竭游泳时间和相关乳酸指标。结果表明,该运动饮料的最佳配方为:短梗五加多酚用量10.12%、柠檬汁用量16%、蔗糖用量7.24%、羧甲基纤维素钠用量0.3%、黄原胶用量0.15%,所得饮料呈橙色、色泽光亮且均一,酸甜适中,具有柠檬香味,静置后未有明显沉淀与分层,感官评分为(88.6±1.7)分。与空白对照组相较,中、高剂量的运动饮料可极显著延长小鼠力竭游泳时间(P<0.01),显著增强体内乳酸脱氢酶活力(P<0.05, P<0.01),并显著降低乳酸含量(P<0.05, P<0.01),因此有利于缓解机体疲劳。

     

    Abstract: A new formula of sports beverage was developed by polyphenols of Acanthopanax sessiliflorus as raw materials. On the basis of single factor tests, response surface test was used to determine the best proportion of sports drink components. The exhaustive swimming time and related lactic acid biochemical were as indexes in different groups of mice, respectively. The optimum formula of sports beverage was obtained, when the polyphenols amount of Acanthopanax sessiliflorus was 10.12%, the amount of lemon juice was 16%, the amount of saccharose was 7.24%, the amount of sodium carboxymethylcellulose was 0.3%, and the amount of xanthan gum was 0.15%. The sensory evaluation score of the beverage under optimum process preparation was (88.6±1.7) score. The beverage solution presented an orange color, transparent, with the proper acidity and sweet, and had strong fragrance of lemon, without obvious precipitation or stratification.Compared with the blank control group, the sports beverage at middle and high doses could significantly prolong the swimming time in mice (P<0.01), enhance the LDH activity (P<0.05, P<0.01) and obviously decrease BLA content (P<0.05, P<0.01) in vivo. Therefore, the sports beverage of Acanthopanax sessiliflorus had better fatigue relieving effect.
