Abstract:
A new compound beverage was developed regarding as raw materials that polysaccharides of
Chlorella and
Passiflora edulis. The best formula was optimized with taking sensory evaluation score and centrifugation precipitating rate as evaluation index by single factor experiment and response surface methodology. Meanwhile, effect of the beverage on exercise endurance in body was evaluated by animal tests. The sensory evaluation score and centrifugal precipitation rate of the beverage that best formula preparation was (88.71±0.87) score and 0.14% separately with addition of the volume ratio of 50%
Chlorella polysaccharide extract and 50%
Passiflora edulis polysaccharide extract was 1: 2, sucrose content was 2.35%, citric acid content was 0.14% and sodium carboxymethylcellulose content was 0.4% (relative percentage of polysaccharide mixture).The beverage presented a light yellow-green color and transparent with the proper acidity and sweet, without obvious precipitation or stratification in storage. Compared with the blank control group, the compound beverage at middle (0.20 mL/(g∙d)) and high doses (0.30 mL/(g∙d)) significantly prolonged exhaustive swimming time of mice obviously decreased MDA content, enhanced noticeably activity of T-SOD and GSH-Px after exercise. Therefore, it could preferably relieve exercise fatigue, and has a good prospect of promotion.
