Radix Pseudostellariae is one of the traditional Chinese medicinal herbs for health care in China. It possesses many bioactive functions, such as antioxidant stress activity, relieving fatigue, myocardial protection, hypoglycemic activity, hypolipidemic activity, improving memory impairment, anti-stress and enhancing immune function. In recent years, more and more attention has been paid to the research of active components of
Radix Pseudostellariae and its development in health food. These research progress has laid the foundation for the application of Radix Pseudostellariae in the food industry. Based on the current research of
Radix Pseudostellariae, this article reviewed the chemical composition, biological activity and application of
Radix Pseudostellariae in food industry, and prospected for the development of
Radix Pseudostellariae, providing a theoretical basis for
Radix Pseudostellariae to play a better role in the practical application of food industry in the future.
