脱氧干燥剂与包装方式对丹桂干花贮藏品质的影响

Effects of Deoxidizing Desiccant and Packaging Method on the Storage Quality of Dried Osmanthus Flowers

  • 摘要: 为提高丹桂干花的贮存稳定性,探索适宜丹桂干花贮存保质的安全、绿色的复合脱氧干燥剂,并确定丹桂干花产品的有效包装方式,本研究以丹桂干花的色度饱和值(Cab值)、菌落总数等为指标,结合肉眼观察,探讨复合脱氧干燥剂与聚乙烯塑料材质、不透明镀铝膜等不同包装方式对丹桂干花贮藏品质的影响。结果表明,采用单层不透明镀铝膜袋包装,并辅以理想的复合脱氧干燥剂(纤维干燥剂:葡萄糖氧化酶质量比=10:1),丹桂干花在干燥、室温下贮存12个月,可以保持色泽金黄,其Cab值为98.20±0.14,菌落总数3.16×103 CFU/g,其外观色泽与微生物指标仍维持在较理想水平。综上,采用纤维干燥剂与葡萄糖氧化酶以10:1为复合比组成的脱氧干燥剂与单层不透明镀铝膜袋包装能显著提升丹桂干花贮藏质量。

     

    Abstract: In order to improve the storage stability of dried Osmanthus fragrans flowers, explore a safe and green compound deoxidizer suitable for dried Osmanthus fragrans flowers storage, and determine the effective packaging method of dried Osmanthus fragrans flowers. In this study, the color saturation value (Cab value) and the total number of colonies of dried Osmanthus fragrans flowers were used as indexes, combined with naked eye observation, to explore the effects of different packaging methods such as composite deoxidizing desiccant, polyethylene plastic material and opaque aluminum coating on the storage quality of dried Osmanthus fragrans flowers. The results showed that the package was packed in a single layer of opaque aluminum coated bag, supplemented with an ideal composite deoxidizing desiccant (fiber desiccant:glucose oxidase=10:1), the dried Osmanthus flowers could be preserved for 12 months that under the drying condition, its color still be golden yellow, its Cab value was 98.20±0.14 and the colonies number was 3.16×103 CFU/g, the sensory quality and hygienic index of the product would maintain at an desired level. Therefore, the deoxidation desiccant composed of fiber desiccant and glucose oxidase at a ratio of 10:1 and single-layer opaque aluminized bag packaging could significantly improve the storage quality of dried Osmanthus fragrans flowers.
