果胶的生物活性及其用于包装材料的研究进展

Advance in Bioactivities of Pectin and Its Application in Packaging Materials

  • 摘要: 果胶是具有良好再生性、凝胶性及生物相容性等特点的生物聚合物,其在食品、医药等领域的应用日益广泛。本文综述了果胶的抗氧化、抑菌、抗炎及免疫调节、抗糖基化、抗凝血等生物活性,分别介绍了果胶与其他天然高分子物质、纳米材料、生物活性剂等复配后应用于食品包装材料的研究进展,并强调研究果胶及其衍生物的分子结构与生物活性之间的构效关系有助于果胶在相关领域的开发及应用,优化果胶基包装材料的性能和加工技术对实现其工业化生产是极为必要的。

     

    Abstract: Pectin is a biopolymer with good regenerative properties, gelibility and biocompatibility, and is increasingly widely used in food, medicine and other fields. This paper reviews the biological activities of pectin, such as antioxidant, antibacterial, anti-inflammatory and immune regulation, anti-glycation, anti-coagulation, etc., and introduces the research progress of biodegradable food packaging materials prepared by the combination of pectin with other natural polymer materials, nanometer materials and biological active agents, finally, it is pointed out that the study of the relationship between the molecular structure and bioactivity of pectin and its derivatives will contribute to the development and application of pectin in related fields, and the optimization of the performance and processing technology of pectin-based packaging materials is essential for their industrial production.
