Abstract:
Objective:Analyze the volatile substance of commercial bird's nest by GC-IMS. Methods:An advanced technique GC-IMS was used to detect the volatile components of 8 bird's nest samples and it's adulterant pig skin. Results:A total of 29 volatile compounds of 5 classes including alcohols, aldehydes, ketones, esters and other substances were detected in bird's nest. Compared with the genuine ones, the average similarity was 89% between the 7 samples and the genuine ones, but only 52% of the pig skin. SPSS analysis showed that the contents of benzaldehyde in bird's nest was higher (10.54%), and the contents of 1-nonyl alcohol (0.07%), dimethyl trisulfide (0.36%), valeraldehyde (0.06%), 2-butanone (0.05%) and 2-hexanone (0.05%) was low. The contents of benzaldehyde in bird's nest was 70 times that of pig's skin, but the content of 2-butanone in pig's skin was 4.6 times that of bird's nest. Conclusion:GC-IMS technique could distinguish pig skin from bird's nest by analyzing the composition of volatile substances, this paper could provide a new idea and reference data for quality evaluation and authenticity identification of bird's nest.
