Abstract:
The preparation of composite coating film was carried out by using tea polyphenol, nobiletin and sodium carboxymethyl cellulose(CMC-Na),and the
Aralia elata(Miq.)Seem. was used as preservation objects for sensory evaluation. The sensory evaluation, weight loss rate, hardness, chlorophyll,V
C content, tpolyphenol oxidase activity and malondialdehyde content were used as indicators. The preservation effect of the composite coating on
Aralia elata(Miq.)Seem. was evaluated in these aspects, and the possible preservation mechanism was analyzed. The results showed that the fresh-keeping effect of the composite coating group on the
Aralia elata(Miq.)Seem. was significantly better than that of the blank control group, and it was also superior to the tea polyphenol coating group and the nobiletin coating group. The composite coating agent could effectively inhibit the browning of the
Aralia elata(Miq.)Seem.,maintain the polyphenol oxidase and malondialdehyde at a low level, maintain vegetable tissue morphology, ensure high sensory quality, delay the loss of V
C content and moisture.When stored for 12 days,compared with the control group,the V
C content of the composite coating film increased by 1.4 times, the weight loss rate decreased by 31%,based on the analysis of various fresh-keeping indexes, the composite coating film could prolong the
Aralia elata(Miq.)Seem. storage time for 4~5 d.
