食源性甾醇类化合物生物活性及应用

Biological Activity and Application of Food-derived Sterol Components

  • 摘要: 食源性甾醇是从可食用植物及菌菇中分离制得的一类甾体类化合物,在自然界中分布广泛。近年来大量研究表明,甾醇类化合物在调节机体生理功能如降低胆固醇等方面发挥着重要作用。因其特殊的生理活性和物理、化学性质,这类化合物也开始被广泛应用到工业生产中。本文综述了国内外在食源性甾醇类化合物体内外生理活性及实际应用等方面的研究报道,旨在为更好地利用这类化合物提供一定的理论依据及参考。

     

    Abstract: Food-derived sterols are a class of steroids that can be isolated from edible crops and macrofungus. In recent years,a large number of studies on phytosterols and mycosterols had shown that these compounds could play an important role in regulating physiological functions,such as lowering cholesterol. Because of their special biological activities and physicochemical properties,the compounds have been widely applied in industrial production. The paper reviewed recent researches on practical application and physiological activities of food-derived sterols in vitro and in vivo,aimed to provide a certain theoretical basis and reference for the better use of such compounds.
