Abstract:
Based on 16 strains of
Weissella cibaria which were isolated from the surface of fresh bamboo shoots,their tolerability under low acid,temperature and osmotic stress were evaluated. Then the selected strains with good tolerability were revaluated by experiments of simulated gastric fluid and bile salt. The results showed that,low acid,temperature and osmotic stress showed different strains had different tolerability,and HSG 08,HSG 09,HSG 10,HSG 11 and HSG 15 had better tolerability. In addition,the tolerability of the five strains to pH3.0 simulated gastric fluid showed that HSG 08,HSG 09 and HSG 11 had a higher survival rate,and the survival rate of HSG 08 was the highest. Furthermore,the tolerability of the five strains to bile salt showed that the growth efficiency of HSG 08 was also the greatest after 0.1% bile salt treatment. In conclusion,the tolerability of HSG 08 under different environmental stresses was well,which could be used for the further research of the probiotic features of
Weissella cibaria.
