Abstract:
In order to study the quality characteristics and anthocyanin antioxidant properties of the same blueberry from different producing areas. In this study,"Brightwell Blueberries" collected from the orchards located in Nanjing,Huzhou,Yuxi,and Guiyang were used as experimental materials.The contents of total acid,total sugar,water,soluble solids,protein and mineral elements were determined respectively. The blueberry anthocyanins were extracted with the volume concentration of 60%,pH3.0 ethanol. Anthocyanin content,total reducing capacity and scavenging capacity of two radicals such as hydroxyl radical,DPPH radical were analyzed. Ascorbic acid was used as reference substance to evaluate the antioxidant activity of blueberry anthocyanins. The results showed that there were differences in the nutritional components of "brightwell blueberries" from different producing areas. Blueberries from Guiyang had the lowest total acid content,the highest sugar content and the better ratio of sugar to acid. The four producing areas blueberry of the moisture content were from 80.37% to 83.60%,blueberries from Yuxi have the maximum protein content of 613.50 mg/100 g. Soluble solids content in theblueberries from high to low was Nanjing,Guiyang,Yuxi,and Huzhou. Anthocyanin content and anthocyanin antioxidant capacity of blueberry extract in different areas from high to low are Guiyang,Huzhou,Yuxi,and Nanjing.
