Abstract:
Coffee peel was treated by four pretreatment methods, including ultrasonic, microwave, wet grinding and high pressure explosion to prepare SDF powder. By comparing the experimental group and control group without pretreatment, it was used to compare the yield and color difference of the products, determine the product holding, swelling and other physical properties and characterize the product monosaccharide composition, and rheological properties, etc. The result showed that different pretreatment methods had obvious effect on the yield of SDF, the highest yield of wet grinding pretreatment products was 14.65%, the overall brightness of the product was moderate, whose color was reddish brown and moderately yellow;Color Difference value of the different pretreatment products had a significant difference (
p<0.05), the SDF products in the experimental group had better water holding and swelling performance than those in the control group, but the performance of oil absorption was poor. What's more, the infrared spectra showed that both the SDF products of the experimental group and the control group all had polysaccharide absorption peaks, mainly consisting of rhamnose, fucose, talose, mannose and galactose, pretreatment had little effect on the heat flow properties of SDF products, and had a great influence on the rheological properties, the viscosity and shear stress of SDF products were weakened, and all the samples had significant pseudo plasticity.
