Abstract:
In order to study effect of low-temperature on quality of broad bean fresh pod,set different low-temperature storage(0,4,8 ℃)by studying freezing point and measured its activity of PPO,decay index and mass loss rate during storage at regular intervals. The results indicated that freezing points of broad bean pod were -0.8 ℃;the effects of the treatment of 0 ℃on PPO activity,decay index,mass loss rate and color’s change was less than the rest of treatments,the effects of the treatment of 0 ℃on chlorophyll content was higher than the rest of treatments. The indexes of hardness of broad bean pod by the treatment of 0 ℃were better than others. Effects of different low-temperature treatments on V
C had no significant(
p>0.05). The broad bean fresh pod were suitable for storage at 0 ℃.
