  • 摘要: 近年来,随着液相色谱质谱联用技术的发展,其在医药、环境和食品安全等领域中已得到广泛应用,目前也成为植物蛋白研究的重要手段。本文将从液相色谱质谱联用技术发展及液相色谱质谱联用技术在谷物蛋白、豆类蛋白及其他作物蛋白中的研究和应用进行归纳和总结,并对液相色谱质谱联用技术在植物蛋白研究中的发展方向和前景进行展望,以期为植物蛋白的深入研究提供最新的基础理论。 

     

    Abstract: With liquid chromatography-mass spectrometry technology developing continuously, the liquid chromatography-mass spectrometry technology has been widely available in the field of medicine, environment, food security recently, and also play a key role in plant protein and peptide research.Recently advances on development of liquid chromatography-mass spectrometry and liquid chromatography-mass spectrometry application in the cereals, legumes and other crop proteins were reviewed. The development trend and prospects of plant protein research by liquid chromatography-mass spectrometry were used to provide the latest basic theory for the further study of plant proteins.
