Abstract:
Potato glycoalkaloids are impotant secondary plant metabolites in potato which possess an important role in the process of its self-defence and bring many negative impacts on the quality of potato products as well.In this review, the toxicity of two dominant glycoalkaloids α-chaconine and α-solanine in potato tuber, the influence of glycoalkaloids on potato products, the methods to remove the glycoalkaloids and the research development and significance of potato glycoalkaloid hydrolysis were discussed.The mechanism of potato glycoalkaloids hydrolysis in high and low acid concentration, the factors influencing the hydrolysis and the influence of glycoalkaloids on potato protein concentrate were described in detail.The aim was to draw more attention on the application of hydrolysis by reviewing the potato glycoalkaloid hydrolysis and had guidance on the recycling of potato waste.
