Abstract:
Objective: The effects of ultra high pressure ( UHP) treatment on elimination of allergens in casein from bovine milk were studied by gastrointestinal digestion models.Method: Casein from bovine milk were pretreated at different pressure level, temperature, pressure dwell time and pressure cycle, following by digested at the imitative condition of adult or infant gastrointestinal environment, respectively. The eliminating effectiveness of allergens was detected by indirect enzyme-linked immunosorbent assay ( ELISA) . Orthogonal array design were used to optimize the operating conditions. Result: After the same UHP treatment, the bovine casein was digested in an imitative adult or infant gastrointestinal environment, respetively.The results showed that casein allergen reduction in adult gastrointestinal digestive models was better than in infant's.The optimal UHP combined with adult gastrointestinal digestive models treatment was performed at the condition of 350 MPa, 30 ℃, 15 min, 3 times cycle, and the inhibition rate was 22.67%. The optimal UHP combined with infant gastrointestinal digestive models treatment was performed at the condition of 350 MPa, 30 ℃, 20 min, 1 times cycle, and the inhibition rate was 39.95%.Conclusion: These results demonstrated that UHP treatment followed by adult and infant gastrointestinal digestion had eliminating effect on allergens in casein from bovine milk, and UHP treatment combined with adult gastrointestinal digestion model was more effective in elimination allergens in casein from bovine milk.
