代谢组学在食源性ACE抑制肽研究中应用的进展

Progress in the application of metabonomics methods in food-derived ACE inhibitory peptides

摘要: 代谢组学作为食品科学技术领域一个新兴的重要研究方法,正逐渐应用到活性肽代谢机理及作用机制研究中。本文综述了ACE抑制肽研究现状及瓶颈,同时对代谢组学研究进展及代谢组学在ACE抑制活性肽研究中的应用进行了展望,以期为代谢组学在ACE抑制肽中广泛深入地应用提供参考。

Abstract: Metabonomics as an emerging field of food science and technology is gradually applied to the molecular action mechanism and metabolism of bioactive peptides. This paper presents an overview of the angiotensin converting enzyme inhibitory peptides and metabonomics. In addition,the metabonomics methods used to further study of the angiotensin converting enzyme inhibitory peptides was reviewed,aimed to support extensive application reference of metabonomics in the food-derived peptides field.
