Abstract:
To investigate the nutritional components and evaluate nutritional value of the Synsepalum dulcificum seed,contents of water,starch,crude fiber,crude fat,crude protein,reducing sugar,polyphenol,polysaccharides,amino acids,18 kinds of aminophenol and 12 kinds of mineral were analyzed,with international standard methods and common methods.Contents of water,starch,crude fiber,crude fat,crude protein,reducing sugar,polyphenol and polysaccharides were: 6.74 g /100 g,7.14 mg / g,4.40,15.69,26.76 g /100 g,0.59 mg / g,11.56 mg / g and12.33 mg / g. Contents of 18 kinds of amino acids,at least 8 types were essential amino acids and a variety of medicinal amino acids.The ratio of essential amino acids and non- essential amino was 40.69%.These amino acids included all kinds of human essential amino acids and the proportion was appropriate,SRC was 94.22,and 20 fatty acids identified in seed oil consist of 54.80% unsaturated fatty acids were mainly composed of octadecenoic acid( 29.96%).12 mineral elements of seed were determined and the contents of K and Mn in the tested mineral elements were higher as a relatively abundant macro element and micro element.The content of heavy elements,including Cd、Hg、As and Pb were less than the maximum levels according to Chinese Pharmacopeia( 2010).The date showed the new resource food had rich nutrition and healthy functions,it reveals great development prospects.
