Abstract:
To study the effect of sodium alginate film on the storage quality of passion fruit,Passion fruit was coated by sodium alginate solution with the different concentration of 1%,2% and 3%,contrasting with Passion fruits soaked in distilled water. The shrinkage index,weight- loss ratio,TSS,vitamin C,titrable acidity and total sugars were determined.The results showed that the sodium alginate solution with the concentration of 2% treatment could decrease the shrinkage index and weight- loss ratio of passion fruit,it also could delay the loss of TSS,vitamin C,titrable acidity and total sugars content obviously in passion fruit.
