《食品中污染物限量》新国标中重金属的安全风险分析

Safety analysis of heavy metals in new national standard maximum limits of contaminants in food

  • 摘要: 随着现代社会的发展,工业化、城市化的进一步推进,我国的环境污染问题愈发严重,由于环境污染而造成的食品重金属污染问题逐渐引起人们的重视。本文以GB 2762-2012《食品安全国家标准食品中污染物限量》中无机污染物7种重金属127项指标为研究对象,利用国际食品法典委员会(CAC)制定的每日允许摄入量(ADI)和GB 2762-2012中重金属在每类食品中的限量(MLs)推算出每类食品的每日理论最大摄入量(TMDI),再根据实际调查的消费者的每日实际摄入量(RDI)进行比较。研究表明:11项指标可能存在一定的食品安全风险,9项指标可能存在严重的食品安全风险,存在安全风险的指标占127项指标总数的15.75%,建议相关部门给予关注。 

     

    Abstract: With the development of the society and the promotion of industrialization and urbanization,environmental pollution is becoming severer which results in heavy metal pollution in food,and this problem is interested by more and more people. 7 kinds of heavy metals in 127 standards of GB 2762-2012 were studied in this paper. Using acceptable daily intake( ADI) established by Codex Alimentarius Commission( CAC) and maximum limits( MLs)regulated in GB 2762-2012,theoretical maximum daily intake( TMDI) was figured out,then compared with the customers' real daily intake( RDI) according to the actual investigation,the research showed: 11 standards had certain food safety risks and 9 standards had serious food safety risks,the risk standards were accounted for 15.75%of the total 127 standards.It was suggested that the relative departments should pay more attentions on this problem.
