Abstract:
A research was made on the pollution of heavy metal in M. albus from thirteen counties of Sichuan Province.The concentration of five heavy metals content,including Cd,Cu,Cd,Hg and As in M. albus were determined by graphite furnace or flame atomic absorption spectrometry. The methods of single factor pollution index and comprehensive pollution index were used to assess the levels of pollution and food safety of heavy metals in M.albus.The results indicated that there were statistical differences in the mean metal values that obtained from different site and species in different tissues of M.albus.The concentrations of heavy metals in muscle tissue of M.albus were below the maximum levels set by law.The concentrations of Cd in internal organs inedible parts of M.albus were higher in some areas.It might be concluded that the M.albus from thirteen counties of Sichuan Province was edible,but it is necessary to reduce the content of intake.
