饲料中不同水平花生四烯酸对中华绒螯蟹气味物质的影响

Effect of different levels of arachidonic acid in diets on odorants of Chinese Mitten Crab( Eriocheir sinensis)

  • 摘要: 为研究饲料中不同水平花生四烯酸(Arachidonic Acid,ARA)对中华绒螯蟹气味物质的影响,采用电子鼻(Electronic Nose,E-Nose)对育肥后中华绒螯蟹的整体气味进行对比区分,同时配合整体材料吸附萃取气相色谱-质谱联用仪(Monolithic Material Sorptive Extraction Gas Chromatography-Mass Spectrometer,MMSE-GC-MS)对样品挥发性气味物质的具体种类和含量进行检测与比较。电子鼻所得主成分分析(principal component analysis,PCA)图显示,不同ARA水平下性腺、肝胰腺、肌肉三组被测样品的区分指数分别为74、61、65,说明各组样品组间整体风味信息差异较大,并以性腺最为明显。采用MMSE-GC-MS从性腺、肝胰腺、肌肉中共分离出7类67种挥发性物质,其中醛类物质对各部位的贡献最大。ARA水平对各部位挥发性气味物质的种类没有影响,但是相对含量发生了改变,并且ARA水平对性腺和肝胰腺的挥发性物质浓度影响较大,特别是醛类物质受ARA水平影响最大,而ARA水平对肌肉的挥发性物质浓度影响很小。 

     

    Abstract: To investigate the changes of odorants in samples of Chinese Mitten Crab( Eriocheir sinensis) at different arachidonic acid( ARA) level,the whole odor of these different samples were analyzed by E- Nose,then the types and concentrations of volatile compounds were compared by monolithic material sorptive extraction combined with gas chromatography- mass spectrometer.The discrimination indexes of gonad,hepatopancreas and muscle group from Principal Component Analysis( PCA) polt by E- Nose were 74,61,65,respectively,which illustrated that the whole flavor of samples were different significantly,and the most intensive sample was gonad group. Totally 67 volatile compounds which could be divided into 7 categories were detected from the three edible parts,and the largest contribution category was aldehydes. MMSE- GC- MS showed no difference in the types of volatile compounds in each part,while significant differences were found due to the diverse concentration of every odor compound by the different ARA levels,especially in gonad and hepatopancreas.The volatile odor profile of gonad and hepatopancreas was influenced by the different ARA levels in diet significantly,especially aldehydes,while muscle almost has no significant difference.
