以乳清分离蛋白为主壁材制备DHA藻油微囊粉的研究

Study on the preparation of DHA algal oil microcapsule powder using Whey Isolate Protein as main wall material

  • 摘要: 将DHA藻油与复合壁材依次通过乳化、均质、喷雾干燥等工艺,制备DHA藻油微囊粉。本文以50%DHA藻油为芯材,乳清分离蛋白作为主壁材,以表面油为考察指标,采用单因素实验与Box-Behnken设计相结合的方法对DHA藻油微囊粉配方进行优化。据影响因素与响应值之间的回归方程得最佳DHA藻油微囊粉配方:乳清分离蛋白31.5%,阿拉伯胶11%,乳糖5%,芯材DHA藻油35%,酪蛋白1.76%,单甘酯2.14%,麦芽糊精13.6%。预测DHA藻油微胶囊粉表面油为0.34%,经过三次平行实验,实验验证值为0.28%低于行业标准1.0%,包埋率可达98.78%,载油量为35%。因而本研究是可行的,对于未来指导生产实践具有一定的借鉴意义。 

     

    Abstract: The DHA algae oil and compound wall materials were used to prepare DHA algae oil the micro capsule powedr through emulsification,homogeneous,spray drying process.Taking 50% DHA algae oil as core material,whey protein isolate as the main wall material,the surface oil as index,the single factor experiment and the BoxBehnken design method were used for the DHA algae oil the micro capsule powder formula optimization.According to the influencing factors and the regression equation between response value of the best DHA algae oil the micro capsule powder formula: 31.5% whey protein isolate,arabic gum 11%,lactose 5%,core material DHA algae oil35%,1.76% casein,monoglycerides 2.14%,maltodextrin 13.6%. Prediction of DHA algae oil microcapsule powder surface oil was 0.34%,after three parallel experiments,test value of 0.28 lower than the industry standard 1.0%,the embedding rate could reach 98.78%,the fuel load was 35%. So this research was feasible,and had a certain reference to the production practice.
