Abstract:
The volatile components in different price Lapsang Souchong black tea (A, B and C) were analyzed using headspace-solid-phase microextraction-gas chromatography-mass spectrometry (HS-SPME-GC-MS) . The results showed that the volatile compositions of the entire different price Lapsang Souchong black tea include alcohols, aldehydes, hydrocarbons, esters, phenolic compounds, ketones, nitrogenous compounds and heterocyclic oxygen compounds. But the relative amounts of the compounds varied a lot in different tea. In the Lapsang Souchong black tea A (high price) , the contents of phenylethyl alcohol (11.05%) , benzyl alcohol (7.88%) , geraniol (5.75%) , benzaldehyde (5.33%) , methyl salicylate (3.74%) and (E, E) -3, 5-Octadien-2-one (3.42%) were higher. While in the black tea B (the medium price) , the relative amounts of geraniol (7.4%) , creosol (5.83%) , phenol (4.21%) , 1H-Pyrrole-2-carboxaldehy (3.63%) , naphthalene (3.53%) and methyl salicylate ( 3. 51 %) were higher. And then in the black tea C ( low price) , the relative amounts of geraniol (7.98%) , phenylethyl alcohol (7.32%) , benzaldehyde (7.13%) , benzyl alcohol (3.33%) , methyl salicylate (3.24%) and furaldehyde (2.52%) were higher.
