紫玉米籽粒花青素粗提液抗氧化活性研究

Antioxidant activity of anthocyanin crude extracted of purple corn kernel

  • 摘要: 以不同基因型紫玉米籽粒中提取的花青素粗提液为研究对象,分析比较紫玉米籽粒总酚、花青素的相对含量。并对提取物的还原能力、清除超氧阴离子自由基、羟基自由基的能力进行测定,同时分析了紫玉米籽粒中总酚和花青素含量与体外抗氧化性的关系。结果表明,不同紫玉米品种花青素、总酚含量、还原力及清除羟基自由基和超氧阴离子自由基能力存在显著的基因型差异,其中FS7011花青素、总酚含量最高。紫玉米籽粒花青素和总酚含量与其还原力、清除羟基自由基及超氧阴离子自由基能力呈显著正相关。紫玉米富含花青素,具有较强的抗氧化作用,可用于开发天然抗氧化剂。 

     

    Abstract: Anthocyanin crude extracted of different purple corn kernel were studied. The anthocyanin, total phenolic content and antioxidant activity including reducing power, hydroxyl radical and super- oxide anion radical scavenging activities of purple corn kernel anthocyanin extract and the relationship between anthocyanin, total phenolic content and antioxidant activity were also analyed. The result indicated that there were great differences in anthocyanin, total phenolic, reducing power, hydroxyl radical and super-oxide anion radical scavenging activities among the six purple corn hybrids which FS7011 had the highest anthocyanin, total phenolic content. The anthocyanin and total phenolic of purple corn anthocyanin had significantly positive correlation with reducing power, hydroxyl radical and super-oxide anion radical scavenging activities. Purple corn grain had high content of anthocyanin and possessed strong antioxidant activity, which could be used to develop natural antioxidants.
