Abstract:
trans-2- Alkenals and alkadienals in alcoholic beverages were important aroma and flavor compounds.A new method based on the simultaneous extraction / derivatization with o- ( 2, 3, 4, 5, 6- pentafluorobenzyl) hydroxylamine ( PFBHA) as derivatization reagent by HS- SPME coupled with GC- MS- SIM was developed for quantification of 14 trans-2- alkenals and alkadienals in Chinese liquor. This method showed good selectivity and good linearity ( R2≥0.9924) .The limits of detection ( LOD) , relative standard deviation ( RSD) , and recoveries were0.014
