缫丝蚕蛹蛋白酶解产物体外抗氧化能力研究

Study on the in vitro antioxidant capacity of Silk reeling silkworm pupa protein hydrolysate

  • 摘要: 目的:研究缫丝蚕蛹蛋白酶解产物的抗氧化能力,为缫丝蚕蛹蛋白的深度开发利用提供参考。方法:还原力法、DPPH自由基法、超氧阴离子自由基法、羟自由基法。结果:五种水解度较高的缫丝蚕蛹蛋白多肽中,蚕蛹蛋白水解专用酶的水解产物(E1)的还原力能力最强,酶解原液稀释100倍后吸光度为0.75;对O-2·和DPPH·的清除率也最高,酶解原液分别稀释10倍和100倍,其清除率分别为34.54%和79.38%,·OH的清除率次之,酶解原液稀释10倍清除率为43.77%。结论:蚕蛹蛋白水解专用酶水解得到的缫丝蚕蛹蛋白肽在体外表现出较好的抗氧化活性。 

     

    Abstract: Objective: the in vitro antioxidant capacity of silk reeling silkworm pupa protein hydrolysate was discussed and then a reference for the depth development and utilization of silk reeling pupa protein was provided.Methods:the reducing power and their scavenging activity against DPPH, superoxide anion, hydroxyl free radicals were investigated.Results: the hydrolysis product of special silkworm chrysalis protein hydrolysis enzyme had the maximum reducing power and after diluted the enzyme solution 100 times, the absorbance was 0.75.To O-2·and DPPH·, the scavenging activity were the highest, diluted the enzyme solution 10 times and 100 times respectively, the scavenging rate were 34.54% and 79.38%, respectively.The scavenging rate of ·OH was second, when the enzyme solution was diluted 10 times, the scavenging rate was 43.77%. Conclusion: the hydrolysate of special silkworm chrysalis protein hydrolysis enzyme showed a good antioxidant activity in vitro.
