复配谷物制备饮品专用预制粉的液化酶解工艺研究

Study on liquefied enzymatic hydrolytic process of special precast powder preparation of compound cereal beverage

  • 摘要: 通过谷物复配技术得到复配组合Ⅲ,采用淀粉酶和纤维素酶(复合比1∶1)对其进行液化酶解,在单因素实验的基础上进行响应面优化,确定谷物杂粮饮品专用预制粉最佳液化酶解工艺条件为:底物浓度6.60%、加酶量0.40%、温度61.45℃、时间90min,此时谷物液化水解度(DE)值达54.88%,其中各因素的影响大小顺序:加酶量>时间>温度>底物浓度。 

     

    Abstract: The group Ⅲ of compound cereal, obtained by mixture technique, was used as material to produce the special precast powder of compound cereal beverage by liquefied enzymatic hydrolysis, amylase and cellulase were mixed, composite ratio was 1∶1. Based on the single factor test, the response surface was chosen, and best results were obtained:substrate concentration 6.60%, enzyme concentration 0.40%, tempreture 61.45℃, time 90 min, DE value reached 54.88%. The important order of each factor was as follow:enzyme concentration>time>tempreture>substrate concentration.
