电子束辐照技术在食品工业中应用的研究与进展

Research progress in the application development of electron beam irradiation in food industry

  • 摘要: 电子束辐照技术作为食品工业中的绿色高新技术,近年来在食品质量安全控制领域引起了社会的高度重视。本文结合国内外食品辐照加工研究与应用实例,介绍了电子束辐照技术的原理、特点和装置及其在食品工业中的应用,其中包括杀菌、杀虫、抑制发芽、延迟成熟、降解食品中有害残留物等。并对电子束辐照技术对食品品质的影响研究和进展情况,在应用中存在的问题,以及在食品工业中的发展趋势做了分析和展望。 

     

    Abstract: Electron beam irradiation technology, as a kind of green high-tech of the food industry, has been paid more attention in the food quality and safety control field recently. Based on study and development of food irradiation at home and abroad, its principle, technical characteristics, device, and application in the field of food preservation, including sterilize, insecticide, sprout inhibition, delay of maturation and degradation of residues, have been reviewed in this paper. Furthermore, its impact on food quality, the problems in the application, and development trends and prospects in the food industry have been especially outlined.
