Abstract:
In order to compare with the different effect of refrigerator storage of fixed and variable frequency on quality, flavor and microorganism of fruit and vegetable, fresh cut watermelon had been selected to analyze the parameter variation during 144h storage. After storage, polyphenol oxidase activity and ascorbic acid content both decreased, reducing sugar content decreased firstly and increased subsequently, while polyphenol oxidase activity and ascorbic acid content of variable frequency were higher than that of fixed one. The content of volatile compound such as hexanal, 6-methyl-5-hepten-2-one, nonanal, (E) -6-nonenal, (Z) -2-nonenal, (E, Z) -2, 6-nonadienal were higher and the amount of Escherichia Coli and bacterial colony than that of fixed one. Overall, variable frequency refrigerator has greater advantage on fresh cut watermelon.
