Abstract: Coating can efficiently maintain eggs' quality during storage.Firstly eggs preservation coating materials which were widely used at home and abroad were classified and their comprehensive effect was compared in this article.As a bacteriostatic agent, chitosan was often added in some composite coating agents to enhance the effect of keeping fresh, so as many preservative materials.This article mainly stressed such kind of composite coating agents and their research progress.Finally the article put forward the prospect of the application and research trends of the eggs preservation coating materials.
