海蜇中铝残留检测方法及其安全性的研究进展

Research advancement on detection method and safety of aluminum residue in jellyfish

  • 摘要: 海蜇加工过程中需要添加明矾,导致了铝元素的残留。本文综述了海蜇中残留铝的检测方法,比较不同的样品前处理方法。论述了海蜇中铝残留的安全性问题,当前,食品中的铝残留危害已经引起了广泛关注,相关的风险评估工作亟待开展。 

     

    Abstract: Alums need to be added to processing jellyfish, which resulted in aluminum residue problems.This paper reviewed detection method of residual aluminum in the jellyfish and compares different sample pretreatment methods.This paper discussed security problems of aluminum residue in the jellyfish.Currently, the hazards of aluminum residue in foods have caused widespread concern and relevant risk evaluation work necessary to be carried out.
