响应面法优化提取香椿叶总膳食纤维的工艺条件及其抗氧化活性研究

摘要: 采用响应面法优化中性蛋白酶提取香椿叶总膳食纤维的工艺条件,并测定了其抗氧化活性。结果表明:pH5.8、酶解温度61℃、酶解时间50min、中性蛋白酶添加量0.2%,此条件下总膳食纤维得率为72.45%;香椿叶总膳食纤维浓度在210mg/mL时对DPPH·具有较强的清除能力,IC50为3.26mg/mL;对O-2·、·OH最高清除率分别为35.13%和27.38%。Abstract: Optimization of the technology for extracting total dietary fiber from leaves of Toona sinensis with neutral protease by response surface method and its antioxidant activities were studied in this paper.The results showed that the optimum conditions were pH5.8, enzymolysis temperature 61℃, time 50min and enzyme concentration0.2%.Under these conditions, the yield of total dietary fiber was 72.45%. The total dietary fiber of Toona sinensis leaves had a good scavenging capacity against DPPH radicals with IC50values 3.26mg /mL. The highest scavenging against O-2·and·OH were 35.13% and 27.38% respectively in the range of 210 mg /mL.
