Abstract:
Chinese soft-shelled turtle is a traditional food in China.In this paper, present research status at home and abroad about the nutrition, flavor and functional properties of Chinese soft-shelled turtle were introduced.Chinese soft-shelled turtle had unique flavour, which was a high-protein low-fat food.It contained various functional factors, such as polysaccharide, collagen, taurine and Vitamin B-17.Additionally, Chinese soft-shelled could prevent and cure a lot of dieases including cancer and heart and blood vessel disease, also it could boost up the immunity function of body and resist caducity.
