秋刀鱼营养成分分析、贮藏加工及副产物综合利用研究进展

Research progress in nutritional evaluation, storage and processing of Cololabis saira and comprehensive utilization of its processing by-products

  • 摘要: 秋刀鱼是一种重要的经济鱼类,分布于北太平洋区。近年来,中国大陆开始对秋刀鱼进行研究开发。本文介绍了秋刀鱼营养成分含量、氨基酸组成和脂肪酸组成以及国内外对其贮藏与加工及加工副产物综合利用的研究现状,以期为更好的开发利用秋刀鱼提供参考。 

     

    Abstract: Cololabis saira is one of the most important commercial fish species and is widely distributed in the North Pacific Ocean. It is recently that mainland China has begun research and development into Cololabis saira. The nutrients content, amino acid composition, fatty acid composition, storage and processing of Cololabis saira muscle and comprehensive utilization of its by-products at home and abroad were investigated in order to provide reference for developing utilization of Cololabis saira products.
