蛹虫草所产类胡萝卜素的稳定性研究

Study on the stabilities of carotenoid of Cordyceps militaris

  • 摘要: 从蛹虫草菌丝体中提取色素,经定性分析,结果显示具有三指峰,确定该色素为类胡萝卜素。考察其稳定性,结果表明,温度越高,对其损失越多;Fe3+、Cu2+对其影响较大,H2O2对其影响不明显;但其对HCl敏感,对NaOH不敏感;光照对其具有影响,储存过程中应置于阴暗处。 

     

    Abstract: Extracting pigment from Cordyceps militaris, and after qualitative analysis, showed three finger abstortion, the determing this pigment as carotenoid. The results showed that caroten- oid of Cordyceps militaris was sensative to the temperature, and the ions of Fe3 +and Cu2 +had obvious hyperchromic effect on carotenoid, but other metal ions had little effect on the stability of the carotenoid, and H2O2had little effect on its stabilitied.Although it was sensative to HCl, and it was not sensative to NaOH. And light had much effect on its stabilities, during its storing should keep avoid of light.
