Abstract:
The use of acid sample digestion system to digest, and trace elements amounts of Na, Mg, K, Ca, Mn, Fe, Ni, Cu, Zn, As, Se, Mo, Cd and Pb in muscle tissues of pork, beef and lamp were determined by inductively coupled plasma mass spectrometry. With octopole reaction system, different collision reaction modes were selected, and the sensitivity of the method was ensured. Consequently, the spectral interferences caused by the overlaps of polyatomic molecules were effectively decreased. Detection limits of these trace elements were in the range of 0.005
0.192μg/L. Results showed that three kinds of boneless picnic shoulder contained many wholesome elements, such as Ca, Fe, Zn, Mn, Cu, Se and Mo, but there was great difference between different species. The muscle tissues of different kinds of meats contain little heavy metals.
