Abstract:
The waste in storage and transport and the change of nutritional quality in storage of pepper fruit with different fruit type and pulp thickness were studied in this paper.And the contact between fruit type and pulp thickness with storage quality of pepper fruit were analyzed.Results showed that var.conoides (Mill) Irish and var.acuminatum Fingern were better in transport.The rate of turn color, decay and water loss revealed significant difference between different fruit type in storage period, and there was a significant negative correlation relationship between pulp thickness and water loss rate.Fruit type had a greater influence than pulp thickness on the change of nutrient content in storage such as vitamin C, capsaicin, soluble sugar and soluble protein.
